Okay. I’ll admit it. I’ve been on a bit of a “cauliflower kick” lately. This recipe is too good to keep to myself though. (That would be selfish.) So I’ll share.
If you google “Cauliflower Popcorn” you will get a lot of hits. A lot a lot a lot. I can’t speak for the other 8,400,000 versions of this recipe , but this vegan version is good. Really good. OMG, my husband and I effortlessly polished off an entire head of cauliflower by ourselves in one sitting—popcorn style!

First, a word about nutritional yeast:
It is a great source of B vitamins. It’s got trace minerals needed for gene regulation, metabolism, growth, and immunity. One tablespoon contains 2 grams of protein, containing all nine essential amino acids (YAY!) that humans must get from food. See, what did I tell you? Nutritious! Oh, did I mention it tastes wonderful, too? You can find this item in a health food store or the health food aisle of your supermarket.
Now with no further ado, here is the recipe you have been waiting for.
1 head cauliflower, broken into small florets
¼ cup coconut oil, melted (organic and unrefined, of course)
1 tsp. garlic powder
1 tsp chili powder (optional but recommended)
¼ cup nutritional yeast (not optional if you’re going for that nice “cheesy” flavour)
Salt and pepper to taste
Best served immediately, hot and fresh from the oven. Enjoy as a snack, or as a delicious side dish to any meal.
